Vegan Carrot cake

A few weeks ago  I was completely submerged into a Mary Berry cook book and came across a rather scrumptious looking carrot cake. I obviously couldn't just flick the page over as it was screaming out of the book for me to make it so I took myself over to the pantry and picked out the ingredient to assemble this delicious looking beauty.

 You will need;
175g/6fl oz sunflower oil- plus extra for greasing
175g/6 oz dark muscovado sugar
9 table spoons of apple puree
175g/ 6oz of grated carrots
85g/3 oz of saltanas
55g/ 2oz walnut pieces
grated rind of a orange
175g/ 6 oz self raising flour
1tsp bicarbonate of soda
1tsp ground cinnamon
1/2 tsp grated nutmeg



 Whist this cake is delicious as well as being nutritious it is also vegan! So all the vegans out there, watch out this is a heart breaker. First pre heat your oven to 180o c/350o f/ gas mark 4 . Then make a puree of apple. This acts as the eggs and binds the mixture together.
Next grate a carrot. It is the main part in the show, right?

 Add the muscavardo sugar, the apple puree and the oil into a large mixing bowl and mix up until smooth



Next gentally stir in the sultanas and walnut pieces and dont forget the vibrantly orange carrots that really give the carrot cake its name- carrot cake.



 Sift together the flour, bicarbonate of soda, cinnamon and the nutmeg and combine in your large mixing bowl.
 With your oven preheated, place it into the centre of your oven and bake for 40-45 mins. Then remove the cake from the tin and place on a wire rack to cool completely before icing.
By the way- this cake is very delicious if, like me, your the sort of person that likes, nuts, berries etc.

And with that- the end approaches and its time to kiss goodbye. Im going to lounge around next to the blazing whist eating christmas ckae from the church service this morning and drinking very english tea. Good night! Happy sunday!

Leather&Fur

On a cold autumnal day, you would probably find a girl about the age of 14 wandering the local woods. I love the woods, they make me feel so minuscule in comparison to their heights. The tall elegant trees, leaves blowing wild in the wind.

 Trying to look sassy, despite my hair looking like a birds nest.
 So i took it down and restyled to my liking
 Hello? I found a tree, quite a funny sentence when you wandering around a wood right?
 I find it fascinating when the tree grows green moss all over it. I think it looks so fairytale like and as if it had a green wolly coat on- which it obviously hasn't but, i like to believe.

 I cannot pose for any pictures at all. My brain just changes mode and I dont know how to stand or how to even look. I find it so impossible.



 In a mist of this wood is a big wooden house where the forrest school students come and sit around, playing games. It was a very good place to shelter under the rain, which in any case was rather heavy.

 I love these gloves. I just think that they are so nice to look at. I found them at a christmas market 2 years ago and dig them out every winter and wear them loads so que the blog post involving them.
We finished our little blogging photo date with a swing on the rope swing. A very good way to end a very lovely few hours.

The best books ive ever read!





I love to read. Escaping the harsh reality. Being able to picture a perfect world- that is if your reading a Nice novel like, well non of theese books are quite the representation of 'nice'. 


Ive decided to share the absolute best books i think ive ever read.

The perks of being a wallflower. The book that opened my mind to reading. I got given the perks of being a wallflower 3 christmases ago. My step-mum thought it was a innocent book about a young troubled boy at high school. How it couldn't have been more different. I wont spoil it for you but it is such, such a good book. I thoroughly recommend reading it.

The beach. This is possibly the most phenomenal, sensational unimaginable book ever to be written- besides harry potter. It portrays a mystical story of a young man named richard who travels south east asia and stumbles a pon a map that leads him to the most alluring beach. He meet many and lives happily until suddenly something terrible happens. Ill leave you the suspense.

Gone Girl. Do i need to say anymore. Such a bone chiller. Just writing about it s making me go all shivery. This book is probably the most tense book i think ive ever read. The way amy go about what she does fascinates me in the wrong way. I don't think i can actually write about this book. In a nutshell, this book is a drama, mystery, thriller, and chaperones heaps of uncertainty. If you havent already go to your local waterstones and buy this book and read it. I sat by the aga for hours on end reading this book. Could not put it down.

A autumnal walk

Its the start of autumn!!A few days ago, the family and I went off on a little jolly. And me being me, i took my camera with me to grab some shots of the fallen leaves and the scenery.

What i eat in a day

For years i have been watching 'what i eat in a day' videos and have been so inspired by the food people eat and healthier options than biscuits and crisps.

So I decided well, what could go wrong, Ill blog about 'what i eat in a day'. I kick started my morning with a nice big mug of coffee with semi skimmed milk. I like to use a less fatty milk than whole although you do need fats in your diet i like to get good fats like avocado and nuts. At this point in the day i also take all my medications, berocca and my vitamins.


We went on a long local walk and I came back very hungry so i polished off a bean salad with tuna chunks salad. This salad was honestly to die for, I will defiantly be making this again. I really love beans and pulses, not eating much meat calls for lots of protein. I usually have a soup with chickpeas or kidney beans in but today i didn't so i had to source that protein elsewhere.

 My oldest Bro was down for the weekend and we where showing him all the perks of cornwall and went to a rather famous beach called Praa Sands. Its so lovely there, you walk all the way to the end of the beach and come to a really lovely pub. It was my 3 o clock drink time so we all sat down for a well deserved drink. Obviously i got a hot chocolate because, well, what else would i get?
 The evening, at 9 o clock i sat down to some rice cakes, honey and banana. The best way to end a very physical day. This combo is so yummy and healthy. Bananas are full of potassium and help you go to sleep and the honey well, enjoy that little succulent piece of sweetness.The Rice cakes are so light and fluffy you barely notice them afterwards, which for my case is really good as i suffer from bad bloating from even the slightest of foods.
Tell me if you enjoyed this one and i will do it again some time. I really loved photographing them. Also i will be publishing some photos from our beach walk so look out for them. But for now thats it from me!
